Bang Karim has been selling mutton soup for more than 30 years. He said the secret of his tasty mutton soup is milk. It tastes way more savoury than other mutton soups because of milk. He also has a secret to make every piece of meat tender and not smell.
At first glance, a bowl of hot mutton soup looks like Soto Betawi (beef soup) with a slight brownish colour in midst of pale white milk. The aroma of clove, cardamom and cinnamon burst as you stir the spoon.
Big chunks of red tomatoes and sprinkle emping (cracker made of melinjo seed) served even more than other mutton soups. Hence, it use milk as its soup base, you won’t feeling overwhelmed.
Sop Kambing Bang Karim is a perfect combination of tender meat and offal. Add a little kick with drizzle of lime juice and few spoonful of chilli sauce.
